A romantic fireside drink to woo any woman is Boschendal's Cabernet Sauvignon, a classic red wine that has been nurtured for four years in Boschendal cellars before being released. It is made of grapes grown in three different vineyards, each one imparting a different quality to the wine. Last in line for harvesting are the red grapes and this usually takes place in March. The Cabernet Sauvignon grapes are hand-picked at 24° balling and taken to the cellar where they are crushed and fermented at 28° C and macerated for 21 days on the skins before pressing. After malolactic fermentation 40% of the wine is matured for 12 months in new French oak barrels and the balance in second and third-fill barrels. The Boschendal Cabernet Sauvignon is a fine medium-bodied red wine with a deep ruby colour. It has a typical cigar box nose with hints of mint and herbs and combines good berry fruit with silky tannins on the palate.
Wine and food Boschendal Restaurant is pulling out all the stops for the Mid-Winter Feast 19-22 August. Cabernet Sauvignon would be our first choice to go with the hearty winter food on the menu: oxtail soup, chicken and herb strudel, glazed gammon with Cumberland sauce, roast leg of lamb, grilled line fish and waterblommetjie bredie plus the usual array of salads, cheeses and desserts on Boschendal's buffet. Smooth and refined, Cabernet Sauvignon is also in keeping with the more delicate feminine palate and we would suggest some of the lighter meals at Le Cafè for the ladies to try with this wine: trio of fusion treats - beef samoosa, feta and pecan parcel and prawn firecracker; pepper pissaladière - roasted tomato, pepper and anchovy tartlet; or quesadillas - paper thin tortillas with feta, cheddar, butternut, olives and coriander filling. A fitting ending to a Women's Day meal is the red-wine poached-pear custard tartlet and cafè latte... dieting starts next month!
