TEMPURA WATERBLOMMETJIE RECIPE

With all this extra time on hand, there’s no better time to try a few new recipes in the kitchen. We’ve gone through our recipe archives and chosen one of our favourite dishes, regularly served at our award-winning Werf Restaurant. Our Tempura Waterblommetjies can be dished up as a hearty salad option even during the colder months and makes the perfect addition to a vegetarian feast.

Waterblommetjies (water flowers) is a popular delicacy in the Western Cape, especially cooked into a warm bredie (stew). These flowers can be found floating in ponds during the winter and spring months. To celebrate this local delicacy, our chefs drew some inspiration from what they could find in our garden. With our vegetarian patrons in mind, Executive Chef Allistaire Lawrence and his team created this flavourful and exquisite dish with our very own fresh produce – and a little help from our local, like-minded suppliers.

The Werf Restaurant chefs use only the best available local, seasonal and ethically-sourced ingredients in all our dishes. The majority of our vegetables come from our sustainability-focused Werf Food Garden, where our team works with nature to harvest the best seasonal produce for our kitchens. Combining fresh nasturtium from the garden to create a peppery pesto, with the deep-fried waterblommetjies, adds a beautiful freshness that works exceptionally well with the rich flavours of the cashew nut cream. They’ve managed to combine a variety of intricate and distinctive taste sensations to create a delicate balance of flavour on the plate.

This dish is full of fresh garden flavour and will be a welcome addition to any dinner party. Our winemakers suggest pairing it with a glass of Boschendal’s Appellation Elgin Chardonnay. You can expect expressive grapefruit and golden delicious apple aromas, detailed with graceful lime blossom, frangipani and white truffle aromas that will beautifully complement and enhance the creamy characteristics of the Tempura Waterblommetjie dish.
